You can make Olive Garden Chicken Gnocchi soup just like the Olive Garden does. Just a few ingredients and you can enjoy this famous soup at home.
Ingredients
- 1/4 cup butter
- 1 tablespoon extra virgin olive oil
- 1 cup onion, finely diced
- 1/2 cup celery, finely diced
- 2 cloves minced garlic
- 1/4 cup flour
- 1 quart half and half
- 1 pound Potato Gnocchi, prepared
- 1 cup chicken breast, cooked and diced (you can use a rotisserie chicken)
- 1 cup carrots, finely shredded
- 1 3/4 cups chicken broth
- 1 cup fresh spinach, coarsely chopped
- 1/2 teaspoon thyme
- 1/2 teaspoon parsley
- salt and pepper, to taste
- grated fresh Parmesan cheese, optional
Directions
- Sauté the onions, celery and garlic in the butter and olive oil over medium heat untile the onions become translucent.
- Add the flour and make a roux. Allow the roux to cook about a minute. Add 1 quart half and half.
- While the soup base thickens, cook gnocchi according to package directions.
- Add the carrots and chicken to the base. Once the mixture becomes thick, add the chicken broth.
- Once the mixture thickens again, add the cooked gnocchi, spinach, and seasoning;, simmer until soup is heated through.
