This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Olive Garden Chicken Gnocchi Soup (CopyKat)

You can make Olive Garden Chicken Gnocchi soup just like the Olive Garden does. Just a few ingredients and you can enjoy this famous soup at home.

Ingredients

  • 1/4 cup butter
  • 1 tablespoon extra virgin olive oil
  • 1 cup onion, finely diced
  • 1/2 cup celery, finely diced
  • 2 cloves minced garlic
  • 1/4 cup flour
  • 1 quart half and half
  • 1 pound Potato Gnocchi, prepared
  • 1 cup chicken breast, cooked and diced (you can use a rotisserie chicken)
  • 1 cup carrots, finely shredded
  • 1 3/4 cups chicken broth
  • 1 cup fresh spinach, coarsely chopped
  • 1/2 teaspoon thyme
  • 1/2 teaspoon parsley
  • salt and pepper, to taste
  • grated fresh Parmesan cheese, optional

Directions

  1. Sauté the onions, celery and garlic in the butter and olive oil over medium heat untile the onions become translucent.
  2. Add the flour and make a roux. Allow the roux to cook about a minute. Add 1 quart half and half.
  3. While the soup base thickens, cook gnocchi according to package directions.
  4. Add the carrots and chicken to the base. Once the mixture becomes thick, add the chicken broth.
  5. Once the mixture thickens again, add the cooked gnocchi, spinach, and seasoning;, simmer until soup is heated through.
