This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Date-Cream-Cheese Roll Ups

Ingredients

  • 1 cup butter
  • 1/2 pound cream cheese
  • 2 cups sifted flour
  • 1/4 teaspoon salt
  • 1/4 cup confectioner's sugar, estimated
  • 98 pitted dates

Directions

  1. Cream butter and cheese together. Blend in flour and salt. Chill for several hours, or until firm enough to roll.
  2. Roll to 1/8-inch thickness on board sprinkled with confectioners' sugar. Cut in 1 x 3-inch strips with pastry wheel.
  3. Put a date in center of each strip; and roll up. Put, folded side down, on cookie sheets. Bake in moderate oven, 375 degrees, for about 15 minutes.
  4. If desired, sprinkle with confectioners' sugar. (For variety, substitute nuts or candied cherries for the dates.)
