This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Chocolate Stout Banana Bread

Servings: 12
Yield: 1 Loaf

Cooking: 45 minutes

The original recipe uses Terrapin Moo-Hoo, I like making it with Pensacola Bay Brewery Blackbeard Stout.

Ingredients

  • 2 medium Ripe Bananas (super ripe is best)
  • 1/2 cup Chocolate Stout
  • 1/2 cup Vegetable Oil
  • 1 cup Sugar
  • 2 Eggs
  • 2 cups all-purpose flour
  • 1 teaspoon ground Cinnamon
  • 1 teaspoon Baking Powder
  • 1 teaspoon Baking Soda
  • 1/8 teaspoon Salt

Directions

  1. Heat your oven to 350 degrees and lightly grease a 9×5 inch loaf pan. You can grease it with vegetable oil or spray with Pam.
  2. Peel and cut bananas into 1/2 inch rounds to make them easier to mash. Using a potato masher, mash your bananas into a pulp.
  3. Once your bananas are smooth (a few chunks are ok) add the Chocolate Stout, Vegetable Oil and Sugar. Crack your eggs into a separate bowl and stir to break up the yolk. Add the eggs to your Banana mixture and stir to blend everything together.
  4. In a separate bowl, mix together the Flour, Cinnamon, Baking Soda, Baking Powder, and Salt. Add the Banana
  5. Mixture to your dry ingredients and mix well. A few lumps are ok.
  6. Pour your final mixture into your loaf pan.
  7. Place the loaf pan on the middle oven rack and bake for 40-50 minutes. When a tester inserted into the middle comes out clean, the bread is cooked through.

Variation, only available in the fall: replace the bananas with 1/2 can of pumpkin (not pie filling) and replace the Stout with Pumpkin Vanilla Porter.
