Chocolate Stout Banana Bread

The original recipe uses Terrapin Moo-Hoo, I like making it with Pensacola Bay Brewery Blackbeard Stout.
Ingredients
- 2 medium Ripe Bananas (super ripe is best)
- 1/2 cup Chocolate Stout
- 1/2 cup Vegetable Oil
- 1 cup Sugar
- 2 Eggs
- 2 cups all-purpose flour
- 1 teaspoon ground Cinnamon
- 1 teaspoon Baking Powder
- 1 teaspoon Baking Soda
- 1/8 teaspoon Salt
Directions
- Heat your oven to 350 degrees and lightly grease a 9×5 inch loaf pan. You can grease it with vegetable oil or spray with Pam.
- Peel and cut bananas into 1/2 inch rounds to make them easier to mash. Using a potato masher, mash your bananas into a pulp.
- Once your bananas are smooth (a few chunks are ok) add the Chocolate Stout, Vegetable Oil and Sugar. Crack your eggs into a separate bowl and stir to break up the yolk. Add the eggs to your Banana mixture and stir to blend everything together.
- In a separate bowl, mix together the Flour, Cinnamon, Baking Soda, Baking Powder, and Salt. Add the Banana
- Mixture to your dry ingredients and mix well. A few lumps are ok.
- Pour your final mixture into your loaf pan.
- Place the loaf pan on the middle oven rack and bake for 40-50 minutes. When a tester inserted into the middle comes out clean, the bread is cooked through.
Variation, only available in the fall: replace the bananas with 1/2 can of pumpkin (not pie filling) and replace the Stout with Pumpkin Vanilla Porter.
