Ingredients
- water
- 1 head cauliflower
- 1 medium onion, diced
- 1 carrot, diced
- 1 medium tomato, or tomato paste
- salt and pepper, to taste
Directions
- Partially cook the cauliflower, drain and save some of the water.
- Sauté the onions and carrots in oil. Add tomatoes.
- Add the cauliflower and reserved water. Cook to desired tenderness.
- Cook the macaroni to desired tenderness, drain some of the pasta water. Add the cauliflower mixture and serve.
