This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Jay's Cauliflower Soup

Ingredients

  • water
  • 1 head cauliflower
  • 1 medium onion, diced
  • 1 carrot, diced
  • 1 medium tomato, or tomato paste
  • salt and pepper, to taste

Directions

  1. Partially cook the cauliflower, drain and save some of the water.
  2. Sauté the onions and carrots in oil. Add tomatoes.
  3. Add the cauliflower and reserved water. Cook to desired tenderness.
  4. Cook the macaroni to desired tenderness, drain some of the pasta water. Add the cauliflower mixture and serve.
