Buttermilk Cake

Ingredients
- 1 1/2 cups shortening
- 2 1/2 cups sugar
- 4 eggs
- 1 cup buttermilk
- 1/2 teaspoon baking soda -- dissolved in 1 teaspoon water
- 1/2 teaspoon lemon extract
- 3 1/2 cups all-purpose flour
- 2 lemons -- (or 1 orange)
- 1/2 cup sugar
Directions
- Preheat oven to 350 degrees.
- Cream shortening and sugar.
- Beat in eggs one at a time.
- Add buttermilk, soda water, and extract.
- Gradually add flour and beat until fluffy after each addition.
- Pour into pan and bake at 350F for 1 hour 15 minutes.
- Prepare the glaze as follows.
- Juice and zest the lemons.
- Dissolve the sugar into the juice and add the rind.
- Pour over the cake when it is removed from the oven and still hot.
- Let stand 15 minutes.
