This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Buttermilk Cake

Ingredients

  • 1 1/2 cups shortening
  • 2 1/2 cups sugar
  • 4 eggs
  • 1 cup buttermilk
  • 1/2 teaspoon baking soda -- dissolved in 1 teaspoon water
  • 1/2 teaspoon lemon extract
  • 3 1/2 cups all-purpose flour
  • 2 lemons -- (or 1 orange)
  • 1/2 cup sugar

Directions

  1. Preheat oven to 350 degrees.
  2. Cream shortening and sugar.
  3. Beat in eggs one at a time.
  4. Add buttermilk, soda water, and extract.
  5. Gradually add flour and beat until fluffy after each addition.
  6. Pour into pan and bake at 350F for 1 hour 15 minutes.
  7. Prepare the glaze as follows.
  8. Juice and zest the lemons.
  9. Dissolve the sugar into the juice and add the rind.
  10. Pour over the cake when it is removed from the oven and still hot.
  11. Let stand 15 minutes.
