Filled Butter Rings

Ingredients
- 1 cup butter
- 1/2 cup granulated sugar
- 3 cups sifted flour
- 1/4 teaspoon salt
- 1 cup fruit preserves
- 1/4 cup confectioner's sugar, approximate
Directions
- Cream butter; add sugar; beat until light. Add flour and salt.
- Roll to 1/8-inch thickness. Cut with floured, 3-inch cookie cutter. Cut out centers of half of cookies with 2-inch cutter.
- Bake all cookies on cookie sheets in hot oven, 400F, for 10 minutes, or until lightly browned. Cool on wire racks.
- Spread whole 3-inch cookies with preserves, piled higher at center. Top with cookie rings. Sprinkle confectioner's sugar around edge.
