This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Christmas Stars

Preparation Time: 15 minutes
Start to Finish Time: 30 minutes

Ingredients

  • 3 egg whites
  • 1/8 teaspoon cream of tartar
  • 2 1/2 cups sifted powdered sugar
  • 1 teaspoon grated lemon rind
  • 2 cups ground almonds, unblanched
  • 1/2 teaspoon cinnamon
  • 1 pinch salt

Directions

  1. Beat egg whites until foamy, add cream of tartar, and gradually beat in confectioners' sugar until egg whites stand in stiff moist peaks. Set aside 1/2 cup of this mixture for topping.
  2. Add lemon rind. Stir in almonds. Pat down gently on lightly floured board to 1/4" thickness.
  3. Cut with star cookie cutter and place on lightly greased cookie sheet.
  4. To the reserved topping, add cinnamon and salt, stir in gently, and place a scant teaspoon of this mixture in the center of each star.
  5. Bake at 350 F for 10 to 12 minutes, or until lightly tainted and done.
  6. Remove cookies with a spatula immediately as they come from the oven. They are very tender and have a tendency to stick as they cool.
