Ingredients
- 3 egg whites
- 1/8 teaspoon cream of tartar
- 2 1/2 cups sifted powdered sugar
- 1 teaspoon grated lemon rind
- 2 cups ground almonds, unblanched
- 1/2 teaspoon cinnamon
- 1 pinch salt
Directions
- Beat egg whites until foamy, add cream of tartar, and gradually beat in confectioners' sugar until egg whites stand in stiff moist peaks. Set aside 1/2 cup of this mixture for topping.
- Add lemon rind. Stir in almonds. Pat down gently on lightly floured board to 1/4" thickness.
- Cut with star cookie cutter and place on lightly greased cookie sheet.
- To the reserved topping, add cinnamon and salt, stir in gently, and place a scant teaspoon of this mixture in the center of each star.
- Bake at 350 F for 10 to 12 minutes, or until lightly tainted and done.
- Remove cookies with a spatula immediately as they come from the oven. They are very tender and have a tendency to stick as they cool.
