This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

New Orleans Fruit CakeRecipe Picture

Start to Finish Time: 2 hours

Nutty and delicious

Can also be made in a loaf pan, mini loaf pans or muffin tins.

Ingredients

  • 1 pound dates, quartered
  • 1 pound pecan halves
  • 1 pound candied cherries, diced
  • 1 cup flour
  • 1 cup sugar
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 4 eggs
  • 2 teaspoons vanilla extract

Directions

  1. Blend dates, nuts and cherries together.
  2. Sift together flour, sugar, baking powder, and salt. Add to dates, nuts and cherries.
  3. Beat the eggs and vanilla until foamy, mix all together.
  4. Butter and flour the sides of a tube pan. Line the bottom of the pan with wax paper or parchment.
  5. Bake at 300 degrees F for 1 hour 45 minutes.
