New Orleans Fruit Cake

Nutty and delicious
Can also be made in a loaf pan, mini loaf pans or muffin tins.
Ingredients
- 1 pound dates, quartered
- 1 pound pecan halves
- 1 pound candied cherries, diced
- 1 cup flour
- 1 cup sugar
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 4 eggs
- 2 teaspoons vanilla extract
Directions
- Blend dates, nuts and cherries together.
- Sift together flour, sugar, baking powder, and salt. Add to dates, nuts and cherries.
- Beat the eggs and vanilla until foamy, mix all together.
- Butter and flour the sides of a tube pan. Line the bottom of the pan with wax paper or parchment.
- Bake at 300 degrees F for 1 hour 45 minutes.
