Chex® Caramel Corn 1

Ingredients
- 4 1/2 cups Corn Chex® (Corn, Rice or combination)
- 4 cups popcorn, popped
- 1/2 cup cashew halves, or honey roasted peanuts, if desired
- 1/4 cup margarine or butter
- 6 tablespoons packed brown sugar
- 2 tablespoons light corn syrup
- 1/4 teaspoon vanilla
Directions
- Heat oven to 250 degrees F. Mix cereal, popcorn and cashews in large roasting pan.
- Heat margarine, brown sugar, corn syrup and vanilla to
boiling in 2 quart saucepan over medium heat, stirring
frequently. Pour over cereal mixture; stir until evenly coated.
Bake uncovered 45 minutes, stirring every 15 minutes. Spread on waxed paperto cool, stirring occasionally to break up. Store in airtight container. 19 servings (1/2 cup each).
- Success Hint: Do not use spread or tub products in place of the margarine or butter.
- Variation: Make this crunchy snack in the microwave. Mix cereal, popcorn and cashews in large microwaveable bowl; set aside. Microwave margarine, brown sugar, corn syrup, and vanilla in a large microwavable bowl uncovered on High about 2 minutes, stirring after 1 minute, until mixture is boiling. Pour over cereal mixture, stirring until evenly coated. Microwave 5 to 6 minutes, stirring and scraping bowl after every minute.
