This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Chex® Caramel Corn 1

Ingredients

  • 4 1/2 cups Corn Chex® (Corn, Rice or combination)
  • 4 cups popcorn, popped
  • 1/2 cup cashew halves, or honey roasted peanuts, if desired
  • 1/4 cup margarine or butter
  • 6 tablespoons packed brown sugar
  • 2 tablespoons light corn syrup
  • 1/4 teaspoon vanilla

Directions

  1. Heat oven to 250 degrees F. Mix cereal, popcorn and cashews in large roasting pan.
  2. Heat margarine, brown sugar, corn syrup and vanilla to boiling in 2 quart saucepan over medium heat, stirring frequently. Pour over cereal mixture; stir until evenly coated.
    Bake uncovered 45 minutes, stirring every 15 minutes. Spread on waxed paperto cool, stirring occasionally to break up. Store in airtight container. 19 servings (1/2 cup each).
  • Success Hint: Do not use spread or tub products in place of the margarine or butter.
  • Variation: Make this crunchy snack in the microwave. Mix cereal, popcorn and cashews in large microwaveable bowl; set aside. Microwave margarine, brown sugar, corn syrup, and vanilla in a large microwavable bowl uncovered on High about 2 minutes, stirring after 1 minute, until mixture is boiling. Pour over cereal mixture, stirring until evenly coated. Microwave 5 to 6 minutes, stirring and scraping bowl after every minute.
