Banana Spice Cake

Prepare as directed and add a cream cheese frosting or prepare in a tube pan.
Ingredients
- 2 1/2 cups cake flour
- 1 1/4 cups sugar
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1/2 teaspoon nutmeg
- 1/2 teaspoon allspice
- 2/3 cup shortening
- 1/2 cup milk
- 1/3 cup molasses
- 2/3 cup mashed bananas
- 3 eggs

Directions
- Preheat oven to 375F. Grease and flour bottoms of two 8-inch round cake pans.
- Sift together flour, sugar, baking powder, baking soda, salt and spices into a bowl.
- Add shortening, milk, molasses, and bananas and mix until dampened. Beat on low speed of electric mixer 2 minutes.
- Add eggs and beat 1 more minute.
- Pour batter into prepared pans, dividing evenly. Bake on middle rack of preheated oven about 40 minutes or until cake springs back in center.
- Remove pans to rack for 10 minutes, then remove from pans and cool completely on rack.
