Sourdough Bread

Recipe From: Aunt Gen
Source: Genevieve Snipes

Serving Size: 36
Yield: 3 loaves

Preparation Time Bread: @ 1 Day
Cooking Time: 30-40 Min

NOTE: Aunt Gen made this and said it was very good. Share the starter and get someone else cooking.

Ingredients

  • 3 cups whole wheat flour
  • 4 cups bread flour
  • 1/4 cup sugar
  • 1 tablespoon salt
  • 1/4 cup canola oil -- or olive
  • 1 1/2 cups Sourdough Bread Starter
  • 2 cups hot water
  • 1/2 cup flax seed -- optional

Directions

  1. Mix all the ingredients in a large bowl (electric mixer bowl). Add a little more flour if dough is too sticky. Leave dough in bowl and spray with Pam and cover loosely with foil. Let sit on counter for 8 - 12 hours. (I did this overnight and it worked).
  2. Punch it down just a little and divide it into 3 - 4 parts. Knead 12 to 15 times on a floured surface and put in greased (Pam) loaf pans. Spray tops with Pam and cover with waxed paper.
  3. Cover waxed paper with cotton dish towels and let stand for 6 - 12 hours. (I went with 8 hours and they were fine).
  4. Bake at 350 for 30 to 40 minutes. Remove from pans, brush with butter if you want the calories and let them cool. Try some warm or wrap them for later. ENJOY!!!!!!

Sourdough Bread Starter

Preparation Time 8-12 hours
Source: Genevieve Snipes

Ingredients

  • 3/4 cup sugar
  • 3 tablespoons potato flakes
  • 1 cup hot water -- from tap

Directions

  1. Double or triple this starter at first if you wish to make the three loaves. You can reduce the recipe to one loaf if you prefer. However, it goes really fast at my house!
  2. Stir and let sit on counter 8-12 hours. Stir and if you are making bread use 1/2 cups of starter. Put remaining in refrigerator. If you are not making bread give it away or throw away one cup. Repeat every 3 - 7 days. Do not go longer than 7 days without feeding the starter.
