Butter Cookies

Note: The original directions from the Black Book said: Combine and bake for 20 minutes at 350F. - Very good! So the instructions below may be way off.
Ingredients
- 2 pounds butter
- 4 cups confectioner's sugar
- 4 teaspoons vanilla
- 9 cups flour
- 2 cups pecans
Directions
- Preheat oven to 350 degrees F.
- In a large bowl, cream butter and sugar with an electric mixer. Beat in vanilla.
- Mix flour one cup at a time. mixing after each addition. The dough will become very stiff; blend last of the flour in by hand. (If the dough becomes too stiff to work, add water, a teaspoon at a time.) Do not chill the dough.
- Divide dough into manageable balls. On a floured surface, roll each ball into a circle about 12-inches in diameter and 1/8-inch thick. Cut into designs with knife or with cookie cutters, dipping knife or cutter into flour before each use.
- Bake on an ungreased baking sheet on middle rack for 20 minutes at 350F, or until lightly browned. (Adjust time as necessary.)
Serving Ideas: Prior to baking, you can sprinkle with colored sugar crystals or ice them after they cool.
