This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Amazing Coconut Pie

Start to Finish Time: 45 minutes

"A favorite recipe from the 1977 "Proven Baker's Secrets to Bake Yourself Proud"--an insert from a magazine of that year. Very easy to make. Makes its own crust."

Ingredients

  • 2 cups milk
  • 3/4 cup sugar
  • 1/2 cup biscuit mix
  • 4 eggs ( 3 will work if they're extra large)
  • 1/4 cup butter or margarine
  • 1 1/2 teaspoons vanilla
  • 1 cup coconut flakes

Directions

  1. Combine all of the ingredients, except the coconut, together in a blender.
  2. Cover and blend on low speed for 3 minutes.
  3. Pour into a greased 9-inch pie pan.
  4. Let stand about 5 minutes then sprinkle with coconut.
  5. Bake at 350 degrees for 40 minutes.
  6. Serve warm or cool.
