This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Five Minute FudgeFive Minute Fudge

Fast, Easy, Festive
No Beating! Can't Fail! No thermometer or soft-ball tests needed!

Ingredients

  • 2/3 cup evaporated milk, undiluted
  • 1 2/3 cups granulated sugar
  • 1/2 teaspoon salt
  • 1 1/2 cups marshmallows, diced (16 medium)
  • 1 1/2 cups semisweet chocolate
  • 1 teaspoon vanilla extract
  • nuts, for garnish

Directions

  1. Line 8-inch (2 L) square baking pan with waxed paper; set aside.
  2. Combine 2/3 cup (one small can) undiluted Carnation Evaporated Milk, 1 2/3 cups sugar and 1/2 teaspoon salt in saucepan over medium heat. Bring to boil; cook 5 minutes, stirring constantly. (Time when mixture starts to "bubble" around edges of pan.)
  3. Remove from heat. Add 1 1/2 cups (16 medium) diced marshmallows, 1 1/2 cups semisweet chocolate pieces and 1 teaspoon vanilla. Stir vigorously for 1 minute (or until marshmallows melt).
  4. Pour into prepared pan. Garnish with nuts. Chill until set 4 hours or over night. Cut into 1-inch squares. Store in refrigerator in sealed container. (Makes about 2 pounds.)

Variations

  • For Peppermint fudge: Sprinkle 1/4 cup coarsely broken peppermint stick candy over top of fudge in pan.
  • For upside-down coconut fudge: Spread 1 cup flaked coconut on bottom of buttered 8" square pan. Top with fudge.
  • For nut fudge: Add 1/2 cup chopped nuts to fudge mixture before pouring into pan.
