Almond Butter Strips

Ingredients
- 3/4 cup butter
- 1/4 cup sugar
- 1/2 teaspoon almond extract
- 2 cups sifted flour
- 1/8 teaspoon salt
- 1 egg white, slightly beaten
- 2 teaspoons sugar
- 1/8 teaspoon cinnamon
- 1/3 cup very finely chopped blanched almonds
Directions
- Cream butter; add 1/4 cup sugar and flavoring; beat until light. Add sifted flour and salt.
- Chill for several hours, or until firm enough to roll.
- Roll to 1/8 inch thickness. Cut in 1x2 inch strips with pastry wheel. Put on cookie sheets. Brush with egg white.
- Mix 2 tablespoons sugar, cinnamon, and almonds. Sprinkle on cookies.
- Bake in moderate oven, 350F, 8 minutes.
