This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Start to Finish Time: 25 minutes

Note: Pasta with bacon, sausage, egg, and cheese

Ingredients

  • 1 pound bacon
  • 1 pound pork sausage
  • 1 pound elbow macaroni
  • salt, to taste
  • 3 eggs
  • 3/4 cup Parmigiano Reggiano cheese

Directions

  1. Start the water boiling for the pasta.
  2. Cook the bacon crispy. Retain approximately 2 tablespoons of the bacon grease for later.
  3. Cook the sausage in enough of the bacon grease to keep the pan from sticking.
  4. While the meat is cooking, beat the eggs in a bowl with a pinch of salt and half the cheese.
  5. Cook the pasta in the boiling water. Salt the water (like the sea). Drain when al-dente.
  6. Transfer the pasta to a serving bowl. Toss the pasta with the bacon, sausage, reserved bacon grease and remaining cheese.
  7. Stir in the eggs and cheese. Stir until the eggs become creamy, then serve.

Note, Mom and I have a disagreement on the amount of bacon grease you should reserve and mix with the pasta.

She says more like 1/4 cup. If you can get your cardiologist to let you eat this, I think she would prefer my amount.
