This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Stuffed Date Drops

Start to Finish Time: 25 minutes

Ingredients

  • Cookies
    • 1 pound pitted dates (@70)
    • 3 ounces pecans, or walnuts
    • 1/4 cup vegetable shortening
    • 3/4 cup brown sugar
    • 1 egg
    • 1 1/4 cups sifted all-purpose flour
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup sour cream
  • Frosting
    • 1/2 cup butter or margarine
    • 3 cups sifted powdered sugar
    • 3/4 teaspoon vanilla
    • 3 tablespoons water

Directions

  1. For the cookies:
    1. Preheat oven to 400 F
    2. Stuff the dates with the nut halves.
    3. Cream together the shortening and sugar until light.
    4. Beat in egg.
    5. Sift together dry ingredients.
    6. Add dry ingredients and sour cream alternating.
    7. Stir in dates.
    8. Drop mixture onto a greased cookie sheet, one date per cookie.
    9. Bake in hot oven at 400 F for 8-10 minutes. Allow to cool then frost.
  2. Frosting:
    1. Lightly brown 1/2 cup butter or margarine. Remove from heat.
    2. Gradually beat in confectioners' sugar and vanilla.
    3. Add water until at a spreading consistency (about 3 tablespoons.)
