Stuffed Date Drops

Ingredients
- Cookies
- 1 pound pitted dates (@70)
- 3 ounces pecans, or walnuts
- 1/4 cup vegetable shortening
- 3/4 cup brown sugar
- 1 egg
- 1 1/4 cups sifted all-purpose flour
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup sour cream
- Frosting
- 1/2 cup butter or margarine
- 3 cups sifted powdered sugar
- 3/4 teaspoon vanilla
- 3 tablespoons water
Directions
- For the cookies:
- Preheat oven to 400 F
- Stuff the dates with the nut halves.
- Cream together the shortening and sugar until light.
- Beat in egg.
- Sift together dry ingredients.
- Add dry ingredients and sour cream alternating.
- Stir in dates.
- Drop mixture onto a greased cookie sheet, one date per cookie.
- Bake in hot oven at 400 F for 8-10 minutes. Allow to cool then frost.
- Frosting:
- Lightly brown 1/2 cup butter or margarine. Remove from heat.
- Gradually beat in confectioners' sugar and vanilla.
- Add water until at a spreading consistency (about 3 tablespoons.)
