This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Eight-Day Honey Cookies

Ingredients

  • 1 cup honey
  • 1 cup granulated sugar
  • 2 tablespoons orange juice
  • 1 ounce candied citron
  • 1 ounce candied lemon peel
  • 1 ounce candied orange peel
  • 2 2/3 cups blanched almonds, reserve 2/3 cup.
  • 2 cups sifted flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon ground clove
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground allspice

Directions

  1. Heat honey. Add sugar and juice.
  2. Force citron, peels, and 2 cups almonds through food chopper. Add to first mixture.
  3. Add sifted dry ingredients.
  4. Cover, and chill for 8 days.
  5. Roll very thin, and cut with floured, scalloped cutter. Bake on greased cookie sheets in moderate oven, 325 degrees, for 8 to 10 minutes.
  6. Spread with icing of confectioners' sugar mixed with orange juice and a litter grated rind. Top each with a whole almond, using remaining 2/3 cup.
  7. Store airtight 2 weeks before using.
