1 cup milk, 2 cups sugar, 3 cups flour, and 4 eggs give this cake its easy to remember name.
The basic recipe can be used in making layer cake, loaf cake, tube cake, sheet cake, or cup cakes. Nuts and chocolate can be added for variety.
Ingredients
- 3 cups sifted cake flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 1 cup shortening
- 2 cups sugar
- 1 teaspoon vanilla
- 4 eggs (separated)
- 1 cup milk
- 1 recipe 7-Minute Frosting
Directions
- Preheat oven to 375F.
- Sift flour, baking powder, and salt together.
- Cream shortening with the sugar and the vanilla until fluffy.
- Add egg yolks and beat thoroughly. Alternately, add sifted dry ingredients and milk in small amounts. Beat well after each addition.
- Beat egg whites until stiff, but not dry, and fold into batter.
- Pour batter into greased pan, bake approximately 30 minutes at 375F.
- Allow to completely cool before frosting.
Variations
- Marble Cake: Mix batter and divide into two equal parts. Add two ounces of cooled, melted chocolate to one part. Fill cake pans by spoonfulls, alternating plain with chocolate batter. Bake at 375 degrees for 35-40 minutes.
- Surprise Cup Cakes: Mix batter and add 1 cup of chopped nuts. Bake in muffin tins lined with crinkle paper cups
