This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Aunt Pat's Baked Apples

Start to Finish Time: 45 minutes

TIPS: You can prepare the filling in advance, cover and refrigerate. Warm to at least room temperature before filling apples.:

Ingredients

  • 4 medium apples, Rome Beauty or Pippin
  • water
  • lemon juice
  • FILLING:
    • 3 tablespoons butter
    • 2 tablespoons brown sugar
    • 1 tablespoon all-purpose flour
    • 2 teaspoons ground cinnamon
    • 1 teaspoon ground cloves
    • 3 tablespoons chopped walnuts
    • 3 tablespoons grated coconut

Directions

  1. Rinse apples. Cut into halves. Core. Do not peel. Place apples in cold water with lemon juice
  2. Prepare filling. Melt butter in a saucepan. Add sugar, flour, cinnamon and cloves. Heat.
  3. Add chopped nuts and coconut. Mix to blend.
  4. Remove apples and pat dry.
  5. Place apple halves in an oven proof dish. Fill holes with nut mixture and mound filling on top of each apple.
  6. Bake apples at 350 degrees for about 35 minutes or tender and filling is golden brown.
