Graham Cracker Cake

Ingredients
- 2 sticks butter or margarine, creamed
- 2 cups sugar
- 4 eggs
- 1 pound graham crackers, crushed
- 2 teaspoons baking powder
- 3/4 cup evaporated milk
- 2 teaspoons vanilla
- 1 cup coconut
- 15 ounces crushed pineapple
- 1 cup nuts
Directions
- Preheat oven to 350 degrees F.
- In a large mixing bowl, cream butter and sugar; add egg yolks and beat until light and fluffy.
- Mix cracker crumbs, salt and baking powder. Add to the sugar mixture alternating with the milk and vanilla.
- Mix in coconut and crushed pineapples.
Beat egg whites until stiff and fold into the batter along with the chopped nuts. - Grease and flour bottoms of a 9 x 13 x 2-inch pan or two 8-inch cake pans. Pour batter into pan and bake in preheated 350-degree oven for 1 hour 15 minutes or until done.
- Cool before removing from the pan(s).
Serving Ideas: Frost this as you prefer. A good choice would be a cream frosting made of powdered sugar, milk, and lemon extract.
