Irish Oatmeal

Ingredients
- 12 ounces semisweet chocolate chips
- 1 cup flour
- 1/2 teaspoon baking soda
- 1 teaspoon salt
- 1 cup coconut
- 1 cup sugar
- 2/3 cup shortening
- 1 egg
- 1 teaspoon vanilla
- 1/2 teaspoon almond extract
- 1 cup rolled oats
Directions
- Melt chocolate over hot water. Cool slightly.
- Sift flour; measure. Sift again with soda and salt.
- Chop coconut into small pieces.
- Gradually add sugar to shortening, working until mixture is fluffy.
- Beat in egg, vanilla, and almond extract. Stir in chocolate, coconut, and rolled oats. Add flour, mix in well.
- Chill dough several hours.
- Preheat oven to 350 degrees F or moderate.
- Roll out dough on lightly floured board to 1/8" thickness. Cut with star cookie cutter. Decorate with multi-colored candies.
- Bake on lightly greased cookie sheet for 15 minutes.
