This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Aunt Gen's Cream Cheese Balls

NOTES: Even though this is titled as Aunt Gen's Cream Cheese Ball, she got it from someone else and only made it once. We have made it many times to rave reviews each time.

Ingredients

  • 32 ounces cream cheese -- (4 packages)
  • 4 cups grated cheddar cheese
  • 1/2 cup maple syrup
  • 1 cup chopped pecans -- separated
  • 8 ounces raspberry preserves

Directions

  1. Allow cream cheese to come to room temperature.
  2. Combine cream cheese, cheddar cheese, maple syrup and 1/2 cup of the pecans together.
  3. Form into two equal balls and refrigerate until firm,
  4. When the balls have firmed, remove them from the refrigerator. Roll the balls over the remaining pecans to form a crust.
  5. Create a depression at the top of each ball and fill it with raspberry preserves. Allow preserves to spill out over top onto sides of ball. Refrigerate and allow to firm before serving.
  6. Serve with wheat thins or cracker of your choice.
