This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Pecan Butter Balls

Start to Finish Time: 50 minutes

Ingredients

  • 2 cups sifted flour
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 1 cup butter
  • 2 teaspoons vanilla
  • 3 cups finely chopped nuts, divided

Directions

  1. Sift flour, sugar, and salt; work in butter and vanilla. Add 2 cups nuts; mix well. Shape in 1-inch balls.
  2. Roll balls in remaining 1 cup nuts. Bake on cookie sheets in moderate oven, 325F, for about 25 minutes. (Pecans, walnuts, almonds, or filberts can be used. If desired, omit 1 cup of nuts, and roll cookies while warm in fine granulated sugar.)
