This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

7-Up® Cake

A southern tradition

Ingredients

Cake

  • 2 sticks butter -- softened
  • 1 stick margarine -- softened
  • 3 cups sugar
  • 5 each eggs
  • 3 cups cake flour
  • 2 tablespoons lemon extract
  • 7 ounces 7-Up®

Lemon Glaze

  • 2/3 cup confectioner's sugar
  • 1 teaspoon lemon juice

Directions

  1. Preheat oven to 325 degrees.
  2. Cream butter, margarine and sugar together for 20 minutes.
  3. Add eggs, 1 at a time, beating after each addition.
  4. Add flour and lemon extract.
  5. Fold in 7-Up.
  6. Pour into well-greased 12-cup Bundt pan or tube pan.
  7. Bake at 325 degrees for 1 to 1 1/4 hours.
  8. Make Lemon Glaze- mix powdered sugar and lemon juice together.
  9. When cake is cooled, dribble with Lemon Glaze.
