This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Ingredients

  • Cookie
    • 1/2 cup butter
    • 1/2 cup light brown sugar, packed
    • 1/2 cup granulated sugar
    • 1/2 teaspoon vanilla
    • 1 egg
    • 2 cups sifted flour
    • 1 dash salt
    • 1/4 teaspoon baking soda
  • Filling
    • 7 1/4 ounces pitted dates
    • 1/4 cup granulated sugar
    • 1 dash salt
    • 1/3 cup water
    • 1 cup chopped nuts

Directions

  1. Cream butter; add brown sugar, 1/2 cup granulated sugar, vanilla, and egg; beat until light.
  2. Add sifted dry ingredients.
  3. Chill until firm enough to roll.
  4. To make filling: Cut dates in small pieces; bring to boil with 1/4 cup granulated sugar, dash salt, and 1/3 cup water; simmer for 5 minutes, stirring often; add nuts; cool.
  5. Halve dough; roll each half, on floured waxed paper, into 9 x 12-inch rectangle.
  6. Spread with filling; roll up tightly from end.
  7. Wrap in paper; chill overnight.
  8. Slice 1/8 inch thick. Bake in moderate oven, 375 degrees, for 10 minutes.
