Ingredients
- Cookie
- 1/2 cup butter
- 1/2 cup light brown sugar, packed
- 1/2 cup granulated sugar
- 1/2 teaspoon vanilla
- 1 egg
- 2 cups sifted flour
- 1 dash salt
- 1/4 teaspoon baking soda
- Filling
- 7 1/4 ounces pitted dates
- 1/4 cup granulated sugar
- 1 dash salt
- 1/3 cup water
- 1 cup chopped nuts
Directions
- Cream butter; add brown sugar, 1/2 cup granulated sugar, vanilla, and egg; beat until light.
- Add sifted dry ingredients.
- Chill until firm enough to roll.
- To make filling: Cut dates in small pieces; bring to boil with 1/4 cup granulated sugar, dash salt, and 1/3 cup water; simmer for 5 minutes, stirring often; add nuts; cool.
- Halve dough; roll each half, on floured waxed paper, into 9 x 12-inch rectangle.
- Spread with filling; roll up tightly from end.
- Wrap in paper; chill overnight.
- Slice 1/8 inch thick. Bake in moderate oven, 375 degrees, for 10 minutes.
