French Almond Crescents

Ingredients
- 2 cups shelled almonds
- orange rind, of 1/2 orange
- 2 1/2 cups confectioner's sugar
- 1 tablespoon cinnamon
- 2 egg whites
Directions
- Grind almonds fine. Grate orange rind. Sift sugar over almonds.
- Add cinnamon and orange rind. Mix well. Knead with well-scrubbed hands to a stiff paste, adding egg whites gradually.
- Preheat oven to 350 degrees F or moderate.
- Roll out on board sprinkled with confectioner's sugar to 1/4" thickness. Cut into crescents.
- Line baking sheet with greased brown paper or aluminum foil. Bake 20 minutes or until lightly brown. Cool slightly before removing from paper. Decorate with confectioners' frosting and chocolate pieces.
