This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

French Almond Crescents

Start to Finish Time: 50 minutes

Ingredients

  • 2 cups shelled almonds
  • orange rind, of 1/2 orange
  • 2 1/2 cups confectioner's sugar
  • 1 tablespoon cinnamon
  • 2 egg whites

Directions

  1. Grind almonds fine. Grate orange rind. Sift sugar over almonds.
  2. Add cinnamon and orange rind. Mix well. Knead with well-scrubbed hands to a stiff paste, adding egg whites gradually.
  3. Preheat oven to 350 degrees F or moderate.
  4. Roll out on board sprinkled with confectioner's sugar to 1/4" thickness. Cut into crescents.
  5. Line baking sheet with greased brown paper or aluminum foil. Bake 20 minutes or until lightly brown. Cool slightly before removing from paper. Decorate with confectioners' frosting and chocolate pieces.
