This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Sunshine Cake

Start to Finish Time: 1 hour 35 minutes

Ingredients

  • 9 eggs, separated
  • 1/2 teaspoon salt
  • 1/2 teaspoon cream of tartar
  • 1 1/3 cups sugar, sifted
  • 1 orange grated orange rind, or 1 teaspoon orange extract
  • 1 1/3 cups sifted cake flour
  • 2 tablespoons confectioner's sugar

Directions

  1. Preheat oven to 325F.
  2. Beat egg whites until fluffy.
  3. Add salt and cream of tarter gradually, beating constantly. Continue beating until stiff but not dry.
  4. Add sugar gradually, beating constantly, until all sugar is used and mixture does not run or slip when pan is stood on end.
  5. Blend in orange rind or extract.
  6. Gradually sift flour onto mixture. Gently and carefully, fold in until well mixed after each addition.
  7. Beat egg yolks until thick and lemon colored. Gradually fold into first mixture.
  8. Pour into ungreased, 10-inch tube pan. Bake in a moderate (325F) oven for 1 hour 15 minutes.
  9. Sift confectioner's sugar over the cake before serving.
