Fresh Coconut Cake

Ingredients
- 1 cup shortening
- 2 cups sugar
- 3 1/2 cups sifted cake flour
- 3 1/2 teaspoons baking powder
- 3/4 teaspoon salt
- 1 cup milk
- 2/3 cup fresh coconut
- 6 egg whites (stiffly beaten)
Directions
- Preheat oven to 350F.
- Cream shortening and gradually beat in sugar.
- Add sifted dry ingredients with milk.
- Fold in coconut and egg whites.
- Pour into greased, wax paper lined loaf pan. (13"X9"X2") Bake in a moderate (350F) oven approximately 45 minutes.
