Vanilla Roll-out Cookies

Ingredients
- 1/2 pound butter or margarine (1 cup)
- 1 cup granulated sugar
- 2 eggs
- 1/2 teaspoon vanilla
- 2 1/2 cups sifted all-purpose flour
Directions
- Cream together butter (or margarine) and sugar, until fluffy. Add eggs beating after each one; add vanilla and blend thoroughly. Beat in flour and chill overnight in refrigerator.
- Roll out a small amount of dough at a time (keeping the remainder in the refrigerator) on a heavily floured board to about 1/8" thickness, and cut into desired shape.
- Place on an ungreased cookie sheet and decorate*. The scraps should go back into the refrigerator until time to roll them out.
- Bake at 350 F for 8 to 10 minutes, or until a delicate golden.
*Decorating notes: Dellarobia cookies can be made with a scalloped cutter, with 2 halves of a candied cherry pressed close together in the scallop to simulate a red bow, and pieces of citron for the wreath. Or candied cherries and citron which has been soaked for a few minutes in green food coloring. Stars glazed with egg white or yolk and sprinkled with a combination of granulated sugar, cinnamon, ground nuts and a pinch of salt. Or sprinkle cookies before baking with colored sugar and silver dragées.
