This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Carrot Cake

Ingredients

  • 2 cups grated carrots
  • 2 cups sugar
  • 1 1/4 cups oil
  • 3 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons baking soda
  • 2 teaspoons salt
  • 2 teaspoons cinnamon
  • 4 eggs
  • 1/2 cup chopped nuts

Serving Ideas : Excellent with cream cheese frosting.

Directions

  1. Preheat oven to 350 degrees F.
  2. Mix carrots, sugar and oil in a bowl. Let stand for 5 minutes.
  3. In a large bowl, mix flour, baking powder, baking soda, salt and cinnamon.
  4. Add carrot mixture to the dry ingredients and blend well.
  5. Add eggs and nuts, beat for 4 minutes.
  6. Pour mixture into an ungreased pan, bake at 350 degrees F for 1 hour and 10 minutes.
