Carrot Cake

Ingredients
- 2 cups grated carrots
- 2 cups sugar
- 1 1/4 cups oil
- 3 cups flour
- 2 teaspoons baking powder
- 2 teaspoons baking soda
- 2 teaspoons salt
- 2 teaspoons cinnamon
- 4 eggs
- 1/2 cup chopped nuts
Serving Ideas : Excellent with cream cheese frosting.
Directions
- Preheat oven to 350 degrees F.
- Mix carrots, sugar and oil in a bowl. Let stand for 5 minutes.
- In a large bowl, mix flour, baking powder, baking soda, salt and cinnamon.
- Add carrot mixture to the dry ingredients and blend well.
- Add eggs and nuts, beat for 4 minutes.
- Pour mixture into an ungreased pan, bake at 350 degrees F for 1 hour and 10 minutes.
