Ingredients
- Cookies
- 2 3/4 cups flour
- 1/2 teaspoon baking soda
- 1 teaspoon cinnamon
- 1/2 teaspoon cloves
- 1 teaspoon allspice
- 1 teaspoon nutmeg
- 1 lemon
- 1/3 cup nuts
- 1/3 cup candied citron
- 1 cup honey
- 1/4 cup shortening
- 3/4 cup brown sugar
- 1 egg
- Glaze
- 1 cup sugar
- 1/2 cup water
- 1/4 cup confectioner's sugar
Directions
- Cookies:
- Sift flour; measure. Sift again with soda, cinnamon, cloves, allspice, and nutmeg. Grate lemon rind. Squeeze juice.
- Chop nuts into small pieces; cut citron fine.
- Mix honey and shortening; beat until creamy. Beat in sugar, egg, lemon rind and juice. Stir in dry ingredients, nuts, and citron. Chill over night.
- Preheat oven to 400 degrees F or hot. Roll out small amount dough at a time to 1/8" thickness on lightly floured board. Cut into rectangles 1 1/2" x 2 1/2". Bake 1" apart on greased baking sheet for 8-10 minutes. Remove from oven and immediately brush with glaze. Decorate with candied cherries and citron. Cool.
- Glaze:
- Boil together 1 cup sugar and 1/2 cup water to ???F on candy thermometer. Remove from heat; stir in 1/4 cup confectioners' sugar.
