This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Jam/Preserve-Filled Pancakes (Æbleskiver)

Ingredients

  • 1 3/4 cups all-purpose flour
  • 3/4 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 1/2 tablespoons granulated sugar
  • 1/2 teaspoon salt
  • lemon zest, of 1/2 lemon
  • 3 each egg yolk
  • 1 1/3 cups buttermilk
  • 3/4 cup ricotta cheese
  • 5 each egg whites
  • 1/2 stick unsalted butter
  • 3/8 cup Jam, or preserves (any flavor)
  • confectioner's sugar

Directions

  1. Whisk together in a bowl, the flour, baking soda, baking powder, granulated sugar, salt and lemon zest.
  2. In another bowl, whisk the egg yolks lightly. In this same bowl whisk in the buttermilk and ricotta. Whisk this egg yolk mixture into the flour mixture until well combined; mixture will be lumpy. Set aside.
  3. Using an electric mixer , on high speed, beat the egg whites until stiff, but not dry peak form - about 2-3 minutes.
  4. Stir the egg whites into the batter in two parts.
  5. Heat pan on medium heat. Put a 1/4 teaspoon butter into each well. When butter bubbles, pour 1 tablespoon batter into each well. Place 1/2 teaspoon of your preserves or jam into the center of the batter and then top with another 1 tablespoon batter. Cook until the bottoms are golden brown and crisp, about 2-3 minutes. Use 2 skewers to flip the pancakes over and cook an additional 2-3 minutes. Sprinkle with confectioner's sugar and serve warm.
