This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Italian Neapolitan Cookies

Ingredients

  • Dark Mixture:
    • 3 cups flour
    • 1/2 teaspoon cinnamon
    • 1/2 teaspoon cloves
    • 1 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1 cup nuts
    • 1 cup shortening
    • 1 1/2 cups brown sugar
    • 2 eggs
  • Light Mixture
    • 2 cups flour
    • 1/4 teaspoon baking soda
    • 1/2 teaspoon salt
    • 3/4 cup seedless raisins
    • 12 candied cherries
    • 1/2 cup shortening
    • 3/4 cup sugar
    • 1 egg
    • 1 teaspoon vanilla
    • 1/2 teaspoon almond extract
    • 2 tablespoons water

Directions

  1. Prepare dark mixture:
    1. Sift flour; measure. Sift again with spices, soda and salt. Chop nuts into small pieces. Cream shortening; add sugar, working until fluffy. Beat in egg, flour and nuts.
  2. Prepare light mixture:
    1. Sift flour; measure. Sift with soda and salt. Chop raisins fine, and cherries in fourths. Cream shortening and sugar until light. Beat in egg, vanilla, almond and water. Stir in flour, raisins and cherries.
    2. Pack 1/2 of the dark mixture into a 9" X 5" X 3" pan. Pack light mixture on top of dark mixture. Cover with remaining dark mixture. Chill overnight.
  3. Start oven 400F or hot. Slice cookies crosswise 1/4" thick, then cut each slice in half. Bake 10 minutes.
  4. Decorate with tinted confectioners' frosting.
