Manicotti Con Spinaci

Ingredients
- 1 cup water
- 1 cup flour
- 3 eggs
- 1 pound ricotta cheese
- 1 pound mozzarella cheese, grated
- parmesan cheese
- salt
- pepper
- 1 pound spinach, optional
- tomato sauce
Directions
- Mix water, flour and 2 eggs together. Butter a hot pan and make thin crapes. Set aside.
- In a bowl mix together ricotta, grated cheeses, salt, pepper. Add cooked and cut up spinach. Fill each crape with 2 tablespoons of filling and roll up. Place on a baking pan that has been covered with a thin amount of sauce. Continue until pan is filled. Cover manicotti with sauce. Sprinkle with Parmesan. Bake at 325 deg for 45 minutes.
