This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Manicotti Con Spinaci

Ingredients

  • 1 cup water
  • 1 cup flour
  • 3 eggs
  • 1 pound ricotta cheese
  • 1 pound mozzarella cheese, grated
  • parmesan cheese
  • salt
  • pepper
  • 1 pound spinach, optional
  • tomato sauce

Directions

  1. Mix water, flour and 2 eggs together. Butter a hot pan and make thin crapes. Set aside.
  2. In a bowl mix together ricotta, grated cheeses, salt, pepper. Add cooked and cut up spinach. Fill each crape with 2 tablespoons of filling and roll up. Place on a baking pan that has been covered with a thin amount of sauce. Continue until pan is filled. Cover manicotti with sauce. Sprinkle with Parmesan. Bake at 325 deg for 45 minutes.
