Cherry Jubilee Cake

Ingredients
- 1 Duncan Hines Cherry Supreme cake mix
- 1 cup pear nectar -- or apricot nectar
- 1/2 cup vegetable shortening
- 1/2 cup sugar
- 1/2 teaspoon cherry flavoring -- or 1 teaspoon juice of Maraschino cherries
- 3 drops red food coloring
- 4 whole eggs
- 1 cup confectioner's sugar
- 6 each maraschino cherries -- chopped
- 2 tablespoons maraschino cherry juice
Directions
- Preheat oven to 350 degrees
- In a large bowl blend cake mix, nectar, shortening, sugar, and cherry flavoring; beat at medium spreed for 1 minute.
- Add eggs one at a time; beat at medium speed for 1 minute after each addition.
- Spread batter in a greased and floured 10-inch tube pan.
- Bake at 350 degrees for about 45 minutes until cake tests done with toothpick.
- Cool right side up for 15 minutes, then remove from pan.
- Mix confectioner's, Maraschino cherries, and cherry juice. Pour over cake while still warm to make glaze.
