Swiss Cinnamon Stars

Ingredients
- 4 cups chopped almonds
- 6 egg whites
- 1 lemon, grated rind and juice
- 2 tablespoons cinnamon
- 1 1/2 pounds confectioner's sugar
- 1/4 teaspoon salt
Directions
- Beat egg whites until stiff. Add grated lemon (rind and juice), cinnamon, and sugar. Continue beating until very stiff.
- Remove one cup of the mixture and reserve.
- Add the almonds to the remaining mixture and refrigerate for several hours or overnight.
- Place on board generously sprinkled with powdered sugar. Sprinkle sugar on top and roll or press to about one-fourth inch thickness.
- Cut into stars with cutter. Place stars on waxed paper on cookie sheet.
- Spread with the reserved egg mixture and bake in slow oven for about 30 minutes.
- Slip paper onto a wet table or board and let stand for one minute. Loosen stars and lift to rack.
- Store in airtight container for one week before using.
