This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Swiss Cinnamon Stars

Ingredients

  • 4 cups chopped almonds
  • 6 egg whites
  • 1 lemon, grated rind and juice
  • 2 tablespoons cinnamon
  • 1 1/2 pounds confectioner's sugar
  • 1/4 teaspoon salt

Directions

  1. Beat egg whites until stiff. Add grated lemon (rind and juice), cinnamon, and sugar. Continue beating until very stiff.
  2. Remove one cup of the mixture and reserve.
  3. Add the almonds to the remaining mixture and refrigerate for several hours or overnight.
  4. Place on board generously sprinkled with powdered sugar. Sprinkle sugar on top and roll or press to about one-fourth inch thickness.
  5. Cut into stars with cutter. Place stars on waxed paper on cookie sheet.
  6. Spread with the reserved egg mixture and bake in slow oven for about 30 minutes.
  7. Slip paper onto a wet table or board and let stand for one minute. Loosen stars and lift to rack.
  8. Store in airtight container for one week before using.
