Nalbone Family Recipes

This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Ingredients

  • 2 eggs, separated
  • 2 tablespoons vegetable oil
  • 1 1/2 teaspoons sugar
  • 1 cup flour
  • 1/2 teaspoon baking powder
  • 1 cup milk
  • 1/4 teaspoon salt

Directions

  1. Beat egg yolks until light in color and stir in sugar.
  2. Stir together remaining dry ingredients; add to egg mixture, alternately with milk. Mix in oil. In separate bowl beat egg whites until stiff; fold into batter. Bake as directed below.
  3. This can only be baked in an Ebelskiver pan.
  4. Heat pan over medium heat until hot.
  5. Place 1/4 to 1/2 tsp. butter in each cup. Add 1 Tbs. batter in each. Bake until edges appear brown and center is bubbly.
  6. While bubbly, turn each Ebelskiver with a fork. Bake until wooden pick inserted in center comes out clean.
  7. Repeat with remaining batter adding butter to each cup and reheating pan for 1 minute between batches.
  8. May be filled while baking with apple slices, cheese, or a tsp. jam. Sprinkle with powdered sugar and serve
