This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Coconut Kisses

Preparation Time: 15 minutes
Start to Finish Time: 35 minutes

Ingredients

  • 1/2 teaspoon salt
  • 4 egg whites
  • 1 cup granulated sugar (1-1/4)
  • 1 teaspoon vanilla
  • 2 cups shredded coconut meat
  • 24 candied cherries, halved

Directions

  1. Add salt to egg whites, and beat until stiff but not dry.
  2. Add sugar, 1 tablespoon at a time, beating until granules are dissolved.
  3. Add vanilla and coconut, mixing lightly.
  4. Drop by teaspoonful onto ungreased brown paper on cookie sheets. Bake in moderate oven, 350 degrees, for about 20 minutes. Slip paper onto wet table or board. Let stand 1 minute. Loosen kisses with spatula; remove to wire racks. Top each with cherry half.
