Pumpkin Cake

Ingredients
- 2 cups all-purpose flour
- 2 teaspoons baking soda
- 2 teaspoons pumpkin pie spice (Omit pumpkin pie spice if using pumpkin pie filling instead of pumpkin.)
- 4 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 2 cups pumpkin
- Cream Cheese Frosting
Directions
- Preheat oven to 350 degrees F.
- In a separate bowl, mix together flour, baking soda and pumpkin spice.
- Beat the eggs and mix in the sugar.
- Mix in the vegetable oil.
- Gradually add in the flour mixture to the wet ingredients.
- Mix in the pumpkin.
- Bake at 350 for 1 hour or until the cake tests done with a toothpick.
- Allow cake to cool fully before icing.
