This recipe collection began as a way to back up my mother's recipe collection that she has collected in a black binder since the 1950's. Maggie and I are also adding recipes that we want to keep track of, so this will become our family go to location for storing and finding our recipes

Danish Medal Cookies

Ingredients

  • 4 cups flour
  • 1 1/4 cups butter or margarine
  • 1/2 cup sugar
  • 4 egg yolks

Directions

  1. Sift flour; measure. Cream butter or margarine until fluffy. Gradually add sugar working mixture until light. Beat in egg yolks.
  2. Add flour gradually mixing until dough is smooth. Chill several hours or overnight.
  3. Preheat oven to 350 degrees F or moderate.
  4. Roll dough on lightly floured board, to 1/8" thickness. Cut with scalloped edged cookie cutter. Cut out opening from top every other cookie. Bake on ungreased baking sheet about 10 minutes. Cool. Put red jelly on plain cookie; top with cut out one.
